Recipe: Creamy Mushroom Chicken

Ok, so occasionally I can reach ingredients in the kitchen and put together some really tasty meals. Tonight I made my boyfriend’s favorite concoction, Creamy Mushroom Chicken.
As it is almost Valentine’s Day (Feb 14th for the guys who don’t remember), why not try this out to tempt your partner’s taste buds?

What you are going to need:


(for 2 people)

2 Large Chicken Breasts
Olive Oil
4 Chestnut Mushrooms
4 Spring Onions
Mixed Herbs (Rosemary & Thyme)
White Wine
1 Clove of Garlic
200ml Pouring Cream
2tbsp of cream cheese (or Crème fraîche)
10g salted butter
Pinch of rock salt
Preheat oven to 200°C (400°F or gas mark 4). Chop the garlic into tiny pieces (no one likes chewing into big pieces of garlic), chop mushrooms and spring onions also.
Place your chicken breasts into a baking dish, then drizzle them with olive oil, sprinkle with mixed herbs and rock salt. Place in the top of a pre-heated oven for 10-15 mins until cooked all the way through.
Heat some olive oil in a large base frying pan, and add some ground salt, mixed herbs, chopped garlic and your chopped mushrooms. Let these simmer together to create a yummy smell!
Then add your spring onions and butter to the mix, allow the butter to melt all the way through. Add a good helping of white wine and allow to simmer (OK, not too much now, you don’t want to get drunk off your meal!).
After all these ingredients have come together nicely, your next step is to reduce the heat of your pan to add the cream cheese (or Crème fraîche) into the mix. Rub this around the pan slowly with a spoon so that it starts to break up. Then add your pouring cream and allow the mixture to simmer on a low heat. Keep stirring the mixture to avoid any ‘skin’ to form on the top of your sauce.

Your chicken breasts should be cooked by this stage, so take it out of the oven and in the words of Gordon Ramsey, “time to plate up”. Spoon your sauce over the chicken breast and add some boiled or roasted vegetables to your dish.

I usually add some homemade crispy potatoes and boiled peas.
